There are restaurants built by chefs, and there are restaurants built by supply. Desde 1911 belongs firmly to the latter category, and that’s not a knock. That’s the point.

The restaurant exists because of Pescaderías Coruñesas, a family run seafood empire founded in 1911 that has quietly controlled the upper tier of Spain’s seafood supply for over a century. If you’ve eaten exceptional fish in Madrid, or much of Spain, frankly you’ve probably eaten their product. Desde 1911 is what happens when the people who source the best seafood finally decide to cook it for themselves.

And the restraint they show is admirable.

This is not a chef’s ego palace. This is not a laboratory. This is a restaurant built around respect. Respect for product, for tradition, for timing, and for the idea that luxury doesn’t need to announce itself loudly to be felt.

The room is beautiful without being cold. Elegant, but lived in. The staff is dialed in and calm, which is always the tell. Ta…
